The menu at this restaurant – let’s call it slate – is vastly different from day to day and depends on the daily market.

Vegetables are sometimes confit and sometimes salt-boiled to fully express their subtle freshness from the best olive oils in the region.
These may come from Castelas Mill, for instance, at the foot of Les Baux-de-Provence Castle!
